Mojo is a delicious sauce of Cuban origin made from these special limes that only really grow in places like Cuba and Florida. I went to Miami last year and fell in love with Cuban flavors. In this recipe, I offer you a slow cooker version of Pork Mojo made with simple ingredients that you can find in almost any grocery store. I have you mix fresh orange juice with fresh lemon juice instead of lime to achieve the same flavor. Because, yes, you won’t find limes anywhere.

These tacos are an absolute treat! I fed them to some visiting family a few months ago and they have been asking for the recipe. Serve it to your family and the same thing will happen!

Slow Cooker Time: 8 to 10 hours
yield: Serves 6 to 8

3/4 cup orange juice
1/4 cup lemon juice
1 head garlic, peeled and crushed
1 tsp salt
1 teaspoon ground cumin
1/2 tsp black pepper
1 (3 to 5 pound) pork shoulder roast

1. In a small bowl stir together orange juice, lemon juice, minced garlic, salt, cumin, and black pepper.

2. Place the pork roast in the bottom of a 5- to 8-quart container slow cooker. Pour the sauce over the pork.

3. Simmer for 8 to 10 hours, until the pork shreds easily with a fork.

4. Shred the pork and serve on a tortilla with the slaw, sliced ​​red onion, and freshly chopped cilantro.

4 cups shredded cabbage
1/4 cup apple cider vinegar
1 tsp sugar
freshly ground salt and pepper

Serve together in a bowl, covered and refrigerated, or serve immediately.
