Mojo is something unique to Cuba, made from these limes and can only be found in Cuba (and South Florida, thanks to some seed smugglers). Because chances are you don’t live in Florida or Cuba, and neither do I, so we’re going to use the next best thing, a mix of lemon and orange juice, to get that tartness. Having tasted both wines within the same week, I’d say it’s a great substitute.

My first taste of mojo was on a trip to Miami. Let me tell you, I absolutely love Miami food. I could spend weeks there soaking up all the flavors that Miami (especially Miami Beach) has to offer.

During that trip, I wolfed down and ate more food than I could ever imagine. Seriously, if you haven’t been to Miami yet, you need to find some time to travel and plan to eat yourself silly. There’s an amazing world of food out there!

Mojo works with those bright acids to create wonderful summer flavors. Just throw it on some Cuban bread and you’ve got a super tasty sandwich. I think you can also use baguette. You can also eat this plan and serve it with some rice and beans.

  • 1 head garlic peeled and crushed
  • 1 teaspoon. Salt
  • 1/2 teaspoon. Black pepper
  • 2/3 cup Orange juice
  • 1/3 cup lemon juice
  • 1 Roast pork butt 3 to 5 lbs
  • 1 onion halved and diced

  • In a small mixing bowl, create your magic by whisking together crushed garlic, salt, pepper, orange and lemon juice.

  • Place pork roast in a 5- to 8-quart slow cooker

  • Pour the magic mixture over the roast. Sprinkle the onions over the roast.

  • Cook on low for 8 hours, until the meat shreds easily with a fork.

  • Mince the meat before serving.Serve warm on toasted Cuban bread
