Tender and flavorful shredded beef with peppers and onions, all cooked low and slow in a saucepan.

Jalapenos are all over our house! It took several tries to perfect this recipe, but let me tell you, it was written perfectly. The jalapeƱo has a bit of heat and a lot of flavor. Yes, there are literally 4 jalapenos in this recipe! You have to remember that the slow cooker will reduce the heat a bit, so don’t worry too much about burning your face. For all of our testing, we ate beef wrapped in tortillas. too delicious! You can also use it in enchiladas, quesadillas, tacos, burritos, and more. It is also super delicious to eat directly. This is a delicious, moist, and tender roast beef. Be sure to watch the video for some great tips.

The beef used in this recipe is from Jones Creek Beef. They live in the same valley as me and I love supporting local businesses. Although they are local to me, you can find their beef in stores all over the place. I’m a total beef snob so I like to buy better quality beef. There are three different grades of beef — Choice, Choice and Prime — that rate the meat for its tenderness, juiciness and flavor. I highly recommend buying minimal select grade meat. It made a huge difference! It will cost you a dollar or two more per pound, but the difference will surprise you. Give it a try sometime!
