I prefer toasted bread for Philly cheesesteaks. I brush them with a little melted butter and bake them under the rack of the oven. This will crisp up the bread and keep the sandwich from getting soggy from all the juices from the meat, peppers and onions. I highly recommend this extra step, which is included in written recipes. Pro tip: You can also melt a layer of cheese directly onto the bread, then place the meat on top of the cheese.
