raw material

  • 2 pound chunk of beef cut into 1/2-inch cubes
  • 1 white onion small dice
  • 2 red bell pepper small dice
  • 2 big carrot small dice
  • 2 celery stalk slice
  • 2 tablespoon Worcestershire sauce
  • 1 cup beef soup
  • 15 ounce can diced tomatoes
  • 7 ounce can diced green chilies
  • 2 tablespoon ketchup
  • 1 tablespoon paprika
  • 2 teaspoon Cumin
  • 2 teaspoon chili
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Salt
  • 2 tablespoon corn starch
  • 1 lime Juiced

  • shredded cheddar cheese
  • sour cream
  • chopped cilantro


  • Heat a large nonstick skillet over high heat. Sear the beef cubes on all 4 sides, about 60 seconds per side. Remove from pot and place directly into the slow cooker.

  • Place diced onion, red bell pepper, carrots, celery, Worcestershire sauce, beef broth, diced tomatoes, green peppers, tomato paste in slow cooker. Add spices (chili powder, cumin, paprika, onion powder, garlic powder and salt).

  • Cook on low for 8-12 hours.

  • 30 minutes before done, remove 1/2 cup of the liquid from the peppers and place it in a small bowl. Add 2 tablespoons cornstarch and blend until smooth. Pour back into slow cooker and stir to combine. Continue to cook for another 30 minutes, as the cornstarch slurry will thicken the juices.

  • Stir in lime juice before serving. Serve with toppings, if desired.
