How long does it take to make smoked carnitas?

Smoking is not an exact science. It’s all about low and slow smoke cooking. Times listed in written recipes are an estimate only. Actual cooking time will depend on a variety of factors, such as how thick your cut of meat is, and how stable your smoker’s temperature is. Cooking the meat until tender should take 4 to 8 hours, most likely on the lower end of the range.

What kind of pellets should I use?

The pellets you use in the smoker will change the flavor of the meat slightly. For this recipe, we prefer to use pecan pellets. You can also use cherries or a competition mix. Experiment and find your own personal preference.

What kind of smoker do you use?

We use the Camp Chef Woodwind Pellet Grill. This recipe will work with any vaping device such as Camp Chef, Weber, Masterbuilt, Traeger or other brands.

What if I am not a smoker?

Got a gas grill and want some smoked goodness? You can mimic a smoker by placing a wood chip packet on the grill. Soak some sawdust in water for 30 minutes, then wrap in aluminum foil. Poke small holes in the foil packet to allow the smoke to escape, then place it on the grill over a flame. Small packets will release the smoke into an enclosed grill. Your gas grill won’t monitor the temperature like an electric smoker, so you’ll want to keep an eye on the temperature while cooking. If continued smoking is desired, another wood chip packet can be added.

Smoked Meat Tacos

raw material

  • 1 3-5 pounds pork rump/shoulder
  • 1 tablespoon cumin powder
  • 1 1/2 teaspoon paprika
  • 1 1/2 teaspoon Salt
  • 1 teaspoon chili
  • 1 teaspoon garlic powder
  • 1/2 teaspoon clove powder
  • 1/2 cup vegetable oil


  • Preheat an outdoor electric smoker to 225 degrees Fahrenheit.

  • Cut pork into 1-inch thick strips and place in disposable foil pans.

  • Sprinkle with cumin, paprika, salt, paprika, garlic powder and cloves. Drizzle with vegetable oil. Stir until the pork strips are well coated.

  • Smoking at 225 degrees for 4 hours. After 4 hours, cover with aluminum foil. Return to the smoker and cook for about 2 hours, until the pork is tender and shreds easily.
