Smoked Gouda Mashed Potatoes in a Black Bowl.

6 large russet potatoes
6 cups chicken broth
1/2 cup butter
4 oz cream cheese
1 tsp salt
1/2 tsp white pepper
1 to 2 cups shredded smoked Gouda cheese


1. Bring chicken broth to a boil in a large stock pot. (If you need more liquid to cover your potatoes, you can add water.)

2. Meanwhile, peel and rinse the potatoes. Cut them into bite-sized pieces. Put them in chicken broth. Bring to a boil, reduce heat to medium-low, and simmer until potatoes are tender, about 10 to 15 minutes, depending on the size of the potato cubes.

3. Drain the liquid from the potatoes. Add butter, cream cheese, salt and pepper. Puree until smooth with a hand mixer, or mash with a potato masher until the cheese and butter have melted.

4. Add the smoked Gouda cheese until the cheese melts. Serve hot.

Note: Serving this dish as part of a larger meal?You can keep mashed potatoes in a warm place slow cooker while you do everything else. Transfer potatoes to slow cooker and keep on low for 1 to 2 hours.
