hello everyone this is lauren evil spatula! I’m so excited to share these Spicy Chicken, Green Bean and Potato Lettuce Cups with you today! This healthy dinner is packed with flavors from spicy jalapenos to tangy mustard vinaigrette. Even though these cups are packed full of veggies, I guarantee your whole family will love them, picky eaters included!

For this recipe, you’ll start by boiling or roasting some chicken breasts, which you then either cut into bite-sized pieces or simply shred. For an easier no-fuss method, you can also choose to use a store-bought rotisserie chicken!

Then you basically add the rest of the veggies to the hot skillet with a little olive oil to crisp up the potatoes and give the green beans, scallions, and jalapeños a nice char. Since we sliced ​​the potatoes very thin, they cook very quickly. This helps the meal get to your table in under 30 minutes!

I like to use butter lettuce for the base of the cups, but cabbage or leaf lettuce would work too! A few sprigs of microgreens provide extra nutrition, but they’re not necessary to make these cups tasty.
