It is summer! Time to start the vinaigrette, and what better way to do it than with a fruit salad. It combines the goodness of salsa with the freshness of fruit. Isn’t this just screaming summer? I love strawberry salsa and I love pineapple salsa, why not combine the two? It’s super delicious, with a delightful fresh zest.

How do you pick pineapples at the grocery store?

First, choose a larger sized pineapple. This will produce more fruit and less waste. Second, gently tug on the top leaves of the pineapple. If they pull out easily, your pineapple is ripe. The pineapple should not be wrinkled, bruised, or limp at all. These are signs that the pineapple is overripe or damaged.

Spice Grade:

We love the hint of heat the jalapeños bring to this salsa. If you’re sensitive to spice, you can always omit the jalapeños, or even add more if you want extra spiciness!

Can I use dried cilantro in Strawberry Pineapple Salad?

  • 1 Pineapple peeled
  • 1 pound strawberry
  • 2 roma tomatoes diced
  • 1/2 Shallot minced
  • 1/2 chili minced
  • 1/3 cup fresh cilantro Chopped
  • 1 lime Juiced
  • 1/2 teaspoon Salt

  • Peel and core the pineapple, then cut the pineapple into small 1/4-inch dice. Put into a large mixing bowl.

  • Shell strawberries and cut into small 1/4-inch dice. Add to the pineapple bowl.

  • Cut the tomatoes into 1/4-inch dice as well and toss with the pineapple and strawberries.

  • Add the chopped onion and jalapeños to a bowl along with the cilantro, lime juice, and salt. Stir to combine.

  • Let stand at room temperature for 30 minutes before serving. Store in the refrigerator for 24 hours.
