  • How can you tell if a peach is ripe?

    You can tell if a peach is ripe and juicy by three main signs:

    1. The yellow color of the peaches should be a deep golden color. The more golden the peaches look, the better.

    2. Grab the peach and squeeze gently. If you give it a little but you’re not giving much, then the peach isn’t ready to eat. You want the peaches to be very soft when squeezed.

    3. It sounds weird, but you want to look for wrinkles by steaming through the peaches. Wrinkles mean the moisture has evaporated from the peaches, leaving a more intense peach flavor.

  • Can I leave the skin on for this recipe?

    Yes, but don’t. The texture and flavor of the skin doesn’t quite match the salad in my opinion. Do yourself a favor and spend a few minutes peeling the peaches, as this makes the best salad.

  • Can I add protein to salads?

    Yes, you can add protein to salads if desired. I recommend using easy chicken recipes like my Easy Roast Chicken or my Quick Roasted Lemon Chicken Tenders. Both can be made on an outdoor grill or on an indoor stovetop.

  • 4 ripe peaches peeled, cored, diced
  • 1 cup fresh blueberries
  • 2 avocado peeled, cored, diced
  • 1/2 Shallot thin slices
  • 1 cup chopped pecans
  • 1/4 cup fresh mint leaves Chopped
  • 8 ounce Mini Mozzarella Balls
  • 4 cup chopped lettuce

vinaigrette

  • 3 tablespoon white balsamic vinegar
  • 1/3 cup olive oil
  • 2 teaspoon dijon mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar

instruct

  • In a large salad bowl, combine peaches, blueberries, avocado, red onion, pecans, mint, mozzarella balls, and chopped lettuce.

  • In a small bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, onion powder, and sugar.

  • Drizzle over salad before serving and toss to coat.
