At The Stay at Home Chef, we believe less is more when it comes to salads. Keep it simple, keep it delicious, and keep the ingredients to a minimum. That’s exactly what we had in mind when creating this sweet and savory kale salad recipe! A refreshing combination of fruit, nuts and cheese – just 5 ingredients, plus a homemade dressing. If you’re tired of iceberg lettuce salad, it’s a good idea to swap in some kale. It has an earthier and richer flavor and the leaves are very crunchy! We love this crispy kale salad as a side dish, or on its own with a little bread for a light lunch. It only takes 20 minutes to make and requires very little prep work! It’s simple, delicious, and fresh. What more could you ask for?

Can you eat kale raw in a salad?

Because kale does have a natural bitterness, some cooks avoid eating it raw. That said, you can absolutely eat kale raw in salads! It has a more bitter taste than spinach or lettuce, but by adding a few other ingredients to balance it out, it’s the perfect salad base!

Troubleshooting: Does Kale Need to Be Blanched?

Same as above, kale is sometimes blanched to soften the leaves and remove the bitterness. While some salad recipes do include this extra step, you don’t need to worry about it here. Dressing, raisins, nuts, and cheese bring out the flavors of the kale for an easy and delicious salad!

How do you tenderize raw kale?

This extra step isn’t necessary, but it does produce the most tender kale. Remove the kale leaves from the stems and chop them into bite-sized pieces. Place in a large bowl and drizzle with a little olive oil, lemon juice, or apple cider vinegar. Massage the kale with your hands for a few minutes, or until softened.

Kale options:

We use curly-leaf kale in this kale salad, but feel free to use Tuscan-style kale too. For both varieties, be sure to cut off the stems before chopping the leaves.

Apple options for Sweet and Tangy Kale Salad:

Use your favorite apple variety when making kale salad. We love Granny Smith and Honeycrisp ourselves, so we decided to use both! Here are some other apples to choose from:

You can also use apples instead of pears, or both for a delicious variation!

Nut option

Our Kale Crisp Salad gets extra crunch from sliced ​​almonds. That said, you can also use:

  • walnut
  • Walnut
  • sunflower seeds

No matter which nuts you choose, consider toasting them first. It will add even more crunch and flavor to the end result! You can also omit them entirely if you have allergies.
