  • 1 pound Boneless Pork Loin Chops cut into 1/2-inch cubes
  • 2 tablespoon cooking oil
  • 2 tablespoon sesame oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon ginger powder
  • 1 1/2 cup Frozen Peas and Carrots
  • 2 tablespoon minced garlic
  • 4 big egg beating
  • 1/2 cup green onions Chopped
  • 4 cup cooked rice
  • 1/4 cup i am willow (regular or low sodium)


  • Heat a large skillet or wok over medium-high heat and add cooking oil and sesame oil.

  • When heated, add the pork cubes and season with salt, pepper, and ginger. Fry for 5-7 minutes.

  • Reduce heat to low and remove pork from skillet and set aside. Add peas and carrots and fry for about 2 minutes.

  • Add minced garlic and sauté for about 1 minute.

  • Remove the vegetables to one side and pour in the beaten eggs. Cook with vegetables.

  • Reduce the heat to medium-low and add the cooked pork, rice and scallions. Stir carefully to combine.

  • Drizzle with soy sauce and heat thoroughly.

  • Serve hot!
