change and substitution

  • baked beans: Instead of boiled potatoes, you can also use baked potatoes with their skins removed. Using leftover baked potatoes is a great way to repurpose them and save time.
  • onion: If you don’t like scallions, you can substitute chives. Chives have a similar flavor profile and work just as well.
  • sour cream: If you’re looking for a lighter option, you can use 8 ounces of cream cheese and 1 cup of milk instead of 2 cups of sour cream. This substitution will create a casserole that is creamy, light, but still full of flavor.
  • cheese: For the best flavor, sharp cheddar is recommended, but you can always experiment with your own favorite cheese for a unique twist. The options are endless!

Tips and Tricks

  • To ensure your potatoes are soft and easy to mash, make sure to simmer them in chicken stock for 15-20 minutes.
  • For the best flavor and texture, we recommend using russet potatoes.
  • For a creamier casserole, try using cream cheese and milk instead of sour cream.
  • Be sure to let the casserole cool for 5 minutes before serving to allow the flavors to settle.
