We get it, there are a lot of sub-par carrot cakes out there, and this recipe is everything you could want. Moist, fluffy, raisins optional.Yes, raisins are elective. Don’t want them? Don’t add them!cream cheese frosting is absolutely necessary. Carrot cake and cream cheese frosting go together like peanut butter and chocolate, ham and cheese, frosting on donuts… well, you get the idea.

history class: It is believed that today’s carrot cake comes from carrot pudding in medieval Europe. Sugar and sweeteners are expensive, and carrots are used as a sugar substitute. The term “cake” is actually relatively new, dating back to the 13th century, and many people speculated whether the old pudding was really a solid pudding: cake!

  • Do carrot cakes have to have nuts?

    Absolutely not! Whether you have allergies, or simply don’t like them, nuts are completely optional. We love the extra crunch and texture they add, but you’re always welcome to leave them out.

  • Why are raisins listed as optional?

    Raisins are a traditional staple that dates back to medieval European carrot pudding. However, carrot cake has come a long way since then and we love options! Not everyone likes raisins, and we don’t think that should stop you from enjoying carrot cake. So, if you’re a traditionalist and love raisins, add it! You do you! If you don’t normally like raisins, then you probably don’t like raisins in carrot cake either, and you can omit them.

  • Can I use store bought icing?

    We think the homemade cream cheese frosting really takes this carrot cake from amazing to super delicious. However, if you’re in a hurry and need an easy shortcut, you can use canned cream cheese frosting.

  • Egg Replacement Options

    Several options work well when substituting eggs in this recipe.

    • 1/4 cup plain yogurt per egg
    • 1 tablespoon vinegar + 1 teaspoon baking powder, whisked together for each egg
    • 1/4 cup mashed bananas per egg
    • 1/4 cup unsweetened applesauce per egg

    Cakes with cream cheese frosting need to be refrigerated. They can be safely left at room temperature for about 2 hours. After slicing, cover any exposed cake to prevent it from being exposed to the air and drying out.

Carrot Cake

  • 3 cup all purpose flour
  • 2 cup sugar
  • 1 tablespoon baking soda
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1 teaspoon clove powder
  • 1 teaspoon nutmeg powder
  • 1 teaspoon five spice powder
  • 1 teaspoon Salt
  • 1 cup unsweetened applesauce
  • 1 cup canned crushed pineapple slight drainage
  • 1/2 cup vegetable oil
  • 5 big Egg
  • 1 1/2 teaspoon vanilla extract
  • 3 cup carrot strips
  • 2 cup chopped walnuts
  • 2 cup golden raisins (optional)

Cream Cheese Frosting

  • 16 ounce cream cheese soften
  • 1 cup salted butter soften
  • 1 teaspoon vanilla extract
  • 3 – 4 cup powdered sugar


Carrot Cake Recipe

  • Preheat oven to 350 degrees Fahrenheit. Lightly grease three 9-inch round cakes. Dust with flour, then tap out excess or bottom line with parchment paper.

  • In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice, and salt.

  • Add applesauce, crushed pineapple, vegetable oil, eggs, and vanilla. Beat with a hand mixer on medium speed until smooth. This should only take 1 to 2 minutes.

  • Using a rubber spatula, stir in the chopped carrots, walnuts, and raisins (if using) until fully combined.

  • Divide batter among three pans, using about 3 cups of batter in each pan.

  • Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

  • Cool on a wire rack for 15 minutes, then invert cake on rack to cool completely before frosting.

Cream Cheese Frosting

  • Using a hand mixer, beat cream cheese and butter together for 1 minute, until light and fluffy. Add vanilla extract and mix until combined, about 10 seconds.

  • Slowly add powdered sugar, 1/2 cup at a time until smooth, mixing between additions. For frosting completely cooled cakes. Store frosting and/or frosting cakes in the refrigerator.
