After getting tons of requests, we took the recipe for the most amazing brownies and turned them into absolutely perfect Texas pancakes. An easy cake batter that can be made in just one bowl for a delicious topping. The real highlight of the Texas Cake is the cooked frosting that’s poured over the cake while it’s still warm. Cakes are usually made with chopped nuts.

Can I make this in a 9×13 pan?

This recipe can be made in a 9×13 pan, but will require a longer bake time. A 9×13 cake typically takes 35-40 minutes to bake.

Nuts or no nuts? Do I have to put nuts on my Texas pancakes?

Chopped pecans or walnuts are often found on Texas pancakes. Of course, they’re completely optional, especially if you have allergies. You can stir the nuts into the frosting before pouring it over the cake, or you can sprinkle them on top. up to you!

  • 2 cup all purpose flour
  • 2 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoon baking soda
  • 1 teaspoon Salt
  • 2 big egg
  • 1 cup cheese
  • 1 cup warm water
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

  • 1/2 cup salted butter
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup cheese
  • 3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts

  • Preheat oven to 350 degrees. Lightly grease a 13-by-18-inch baking dish.

  • In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

  • Add eggs, buttermilk, warm water, oil and herbs. Stir until well combined and the batter is smooth. This should only take a few minutes. Pour batter into prepared baking pan.

  • Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean. Cool on a wire rack for 15 minutes before frosting.

  • Melt butter in a medium saucepan over low heat. Stir in the cocoa powder, then pour in the buttermilk. Increase heat to medium-high and bring to a simmer, stirring constantly.

  • Once the mixture begins to boil, remove from the heat and whisk in the powdered sugar and vanilla extract until smooth. Pour over the cake lid. Use a squeegee to smooth and spread if desired. Sprinkle over chopped pecans. Allow cake and frosting to cool completely before cutting and serving.
