This cupcake recipe is already fluffy. For an extra fluffy cupcake, separate the eggs. Add the egg yolks to the batter and beat the egg whites separately. Fold the egg whites with the finished batter for the final fluffy cupcakes.

Lightly tap tops of cupcakes. If they feel springy and bounce back, they’re done. If they wobble, the center is not cooked through. You can also test with a toothpick and insert the toothpick into the center. If it comes out clean, your cupcakes are done.

How do you fill the insides of cupcakes?
Filled cupcakes are delicious! If you want to add filling to your cupcakes, follow the recipe to make the cupcakes. Once they’ve cooled completely, place your filling in a piping bag with a wide opening at the end. Place tip directly into top of cupcake and squeeze about 2 teaspoons of filling inside. If you try to add too much, your cupcakes will crack.

Cupcake Baking Tips:
- Do not over mix your batter. You should only mix it until the ingredients are just combined. Over-stirring introduces gluten in the recipe, which can cause your cake to rise in the oven but fall apart as soon as you take it out.
- Keep the oven door closed! If you want to inspect your cupcakes, just look through the window. Open the door to let the heat escape and let the cool air rush in. This can cause uneven baking, especially for cupcakes.
- Bake cupcakes in the center of the oven for the most even heat distribution.
- Immediately after removing the cupcakes from the oven, remove them from the pans and transfer to a wire rack to cool. Leaving them in the pan will continue to bake the cupcakes and may dry out your cupcakes.
- Store cooled frosted cupcakes in an airtight container to keep them from drying out.

- 1/4 cup salted butter soften
- 1/4 cup vegetable oil
- 3/4 cup sugar
- 3/4 cup cheese Room temperature
- 2 big egg Room temperature
- 2 teaspoon vanilla extract
- 1 3/4 cup all purpose flour
- 2 teaspoon Baking powder
- 1/4 teaspoon Salt

Line muffin tins with cupcake liners. Preheat oven to 350 degrees Fahrenheit.

In a large mixing bowl, using a hand mixer, cream butter, vegetable oil, and sugar until light and fluffy. Add buttermilk, eggs, and vanilla extract and mix well.

Add flour, baking powder and salt and mix well. Be sure to scrape the sides and bottom of the bowl to make sure everything is mixed.

Fill each cupcake liner halfway. Bake at 350 for 14 to 18 minutes, until a toothpick inserted in center comes out clean.

Remove cupcakes from pans and transfer to a wire rack to cool completely before topping with your favorite frosting.
