This year it’s National Grilled Cheese Month and I knew I needed to make the spiciest grilled cheese sandwich ever. Sriracha onions, jalapenos, pepper jack cheese, jalapeño flakes, and even a drizzle of sriracha butter bring layers of spiciness to this sandwich. And it doesn’t just burn your face…it tastes good too! It has flavor and a kick. How we love it! In this recipe, I have a special secret to accommodate all the ingredients: toast both sides of the bread. Believe me!   • 3 tablespoon Sriracha Divided into
  • 2 black pepper slice
  • 4 tablespoon softened butter
  • 8 slice bread
  • 12 slice Pepper Jack Cheese
  • 1 cup Crushed Jalapeno Chips

  • Heat olive oil in a medium saucepan, or in a skillet over medium-high heat. Add onion and 2 tbsp sriracha. Saute onions until softened and translucent, about 5 to 7 minutes. Remove onions from pan and set aside. (Optional): Roast jalapeño slices for 1 to 2 minutes.

  • In a small bowl, combine butter and remaining 1 tablespoon sriracha. Butter both sides of all 8 slices of bread. Toast the loaves in a skillet over medium heat until browned and toasted on one side of each loaf.

  • Assemble the sandwiches, toasted side up, on the inside of the sandwich. Combine with 1 slice of pepper jack, some sriracha onion, another slice of pepper jack cheese, sliced ​​jalapeños and crushed jalapeños, and finish with a slice of pepper jack cheese. Place the top loaf on top, toast side down.

  • Grill until the outside slices are toasted and the cheese is melted, turning halfway through.
