What is Colcannon?

Colcannon is a traditional Irish mashed potato recipe served with kale or cabbage. For kids who love potatoes but might not eat kale by the spoonful, this is a great way to get them to eat veggies. Cabbage is also a great addition and you wish you could even have both.

There are several ways to add scallions and kale to mashed potatoes. You can cook the shallots and kale in the same butter and milk you warmed for the potatoes, or you can place them in boiling water for about 1 minute. We like the butter and milk method so that all the nutrients stay in the mix, whereas if you blanch it in water some of the nutrients will be lost once you drain.
