These triple chocolate chip cookies are rich, fudgy and decadent. They’re filled with chocolate and ready in less than 30 minutes.

These cookies are soft and soft. You almost feel like you’re eating a brownie pan. These cookies are made for chocolate lovers because with every bite, you’ll experience an abundance of chocolate! The chocolate flavor in these cookies comes from: cocoa powder, chocolate chips, and a chocolate candy center.

  • Triple Chocolate Chip Cookie Variation:

    • If you’re not too fond of chocolate chips, you can use white chocolate chips or toffee or peanut butter chips.
    • Replace the chocolate cube in the center with your favorite candy. Add Rolo or Caramel or Peppermint Pie or Mini Reese Cups.
    • Rolling cookie dough balls in granulated sugar provides these cookies with a crunchy, sugary topping.
    • If you want to further enhance the chocolate flavor, drizzle some melted chocolate over each cookie after it has cooled.
  • Can I make cookie dough ahead of time?

    Yes! You can refrigerate the dough in a bowl covered with plastic wrap until ready to bake, or you can roll the dough into balls and freeze for up to 3 months until ready to bake. Just let the dough balls thaw to room temperature before baking.

  • Why are my cookies flattened?

    Flat cookies are a common baking problem many of us encounter from time to time. In our experience, the culprit was either the baking soda was too old, or I didn’t measure my flour well enough and under-measured. For the most accurate measurements, you can weigh your ingredients.

Bite Down Chocolate Chip Cookies

raw material

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 big egg
  • 1 teaspoon vanilla extract
  • 2/3 cup cocoa powder
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup chocolate chips
  • 15 Milk Chocolate Squares Dauphin, Godiva or Lindt


  • In a mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.

  • Add eggs and vanilla extract and beat until smooth.

  • Add cocoa powder, flour, baking soda and mix well.

  • Stir in the chocolate chips.

  • Scoop out a small piece of cookie dough and roll into a ball. Flatten each ball and place a chocolate square in the center. Roll cookie dough around chocolate and form into a ball.

  • Place these cookie dough balls on a cookie sheet lined with parchment paper.

  • Bake at 350 degrees for 12-14 minutes or until edges are firm.

  • Allow the cookies to cool completely before removing them from the pan. enjoy!


– If the cookie dough is too soft to form into balls, refrigerate the dough for 30 minutes, it will be easier to handle.
– Leftovers can be kept at room temperature in an airtight container or cookie tin for up to 3 days (if only that long… lol).
– The number of cookies you get from this recipe will vary depending on how big you like your cookies and the size of the chocolate squares you use in the center. I made 15 large cookies with dove chocolate.
