Summer, summer, summer. Watermelons just scream that it’s finally summer. This watermelon salad is a great way to perk up on a hot summer day. We used to bring this salad to our backyard summer BBQ’s to start and eat up every last bit. We’ll be bringing this to more backyard BBQs because, hello, it’s easy to make, healthy, and delicious. Plus, sprinkling mint on top discourages the kids so adults can eat more.
So how to cut watermelon into cubes? There are all sorts of fancy methods and videos where they seem to just do a few quick maneuvers with the knife, slide it over all the edges, and bam…a whole bunch of cubes fall off the skin. We’ve seen them more times than we should admit, and we’re just stuck with the more regular old slice and dice.
How big should the watermelon chunks be?
You want bite-sized pieces. The cubes are too big, and you end up stuffing too much watermelon in your mouth at once, which is embarrassing.
Can I make Watermelon Feta Salad ahead of time?
If you’re in a hurry, this recipe will keep overnight in the fridge, so take advantage and enjoy your relaxing morning before your event!
Storage and Lifespan:
Watermelon Feta Salad will keep in the refrigerator for up to 3 days in an airtight container. If you don’t have a container large enough, store it in a large bowl covered with plastic wrap.

- 6 cup Cubed Seedless Watermelon
- 8 Mint leaf minced
- 1/3 cup shredded cheese
- 1 lemon Juiced
Place the diced watermelon in a large bowl.
Stir in mint and feta. Stir gently as you pour the lemon juice over the watermelon.
Refrigerate until ready to serve.
